Tapioca Syrup

Matco's Tapioca Syrup is a natural, nutritive sweetener made from tapioca starch, available in conventional, certified organic and infant grades. It is gluten-free, non-GMO, vegan and hypoallergenic, and is produced across a range of DE levels to control sweetness, texture and functionality in food and beverage applications.

It is a clear, smooth syrup with a clean, neutral taste: it sweetens without adding any flavor or color of its own, which is exactly what beverages, dairy and light-colored products need. Alongside sweetness, it binds, retains moisture, resists crystallization, and holds a stable viscosity through processing.

Frequently Asked Questions

A nutritive sweetener made by breaking down tapioca starch with natural enzymes into simpler sugars, then filtering and concentrating the liquid into a clear, viscous syrup. No added colors, flavors or preservatives.
Cassava root. The starch is extracted from cassava and converted enzymatically into syrup. The plant is cassava; the refined starch and its derivatives are tapioca.
They are functional cousins. Tapioca is more neutral in taste and clearer in color, so it wins in beverages, dairy, and light-colored products. Rice syrup brings a mild malty note and is the standard in bars and bakery. Many customers buy both and assign them by product line.
Yes. Cassava contains no gluten, and the syrup is hypoallergenic, vegan, and produced from non-GMO tapioca starch, free of soy, corn, and rice.
Unopened and stored properly it keeps for around 24 months. Once opened, keep it sealed, cool and away from sunlight, and discard it if you notice a fermented smell, mold or unusual cloudiness.
We produce tapioca syrup across a range of DE levels to match the sweetness and binding your formulation needs, including a hi-maltose grade at 45 DE. Send us the application and our technical team will recommend and sample the right grade.
